# Expert Advice:

01 -
  • Everything cooks in one skillet, so cleanup is as easy as the cooking.
  • The combination of briny olives, tangy feta, and bright lemon feels like a vacation on a plate.
  • It's keto-friendly and low-carb without tasting like you're missing anything.
  • You can have dinner on the table in 30 minutes, start to finish.
02 -
  • Don't skip breaking up the chicken thoroughly, large chunks won't absorb the seasonings as well and the texture will be uneven.
  • Add the lemon juice off the heat, cooking it will make it bitter and you'll lose that bright, fresh finish.
  • Use block feta and crumble it yourself, pre-crumbled feta is coated in anti-caking agents that prevent it from melting nicely.
03 -
  • Let the chicken brown undisturbed for a minute before stirring, it develops better flavor and texture.
  • Taste before adding salt, the olives and feta are already quite salty and you might not need much.
  • Use a cast iron skillet if you have one, it retains heat beautifully and you can serve straight from it for a rustic presentation.
