# Expert Advice:

01 -
  • The double fry technique creates this insane texture contrast where the chicken stays juicy while the coating gets extra crispy
  • Something magical happens when warm fried chicken meets that sweet Oreo dust it sounds weird but your tastebuds will understand
02 -
  • The second fry goes fast do not walk away from the stove 30 seconds too long and those Oreos turn from amazing to burnt and bitter
  • Crush your Oreos to a coarse powder not fine dust bigger pieces create better texture pockets throughout the coating
03 -
  • Line your workspace with newspaper or parchment before starting the cleanup afterward is significantly less painful
  • If the Oreo coating starts falling off during the second fry your oil might be too hot drop it by 10 degrees
  • These reheat surprisingly well in a 180°C oven for 8 minutes but they will never be quite as good as fresh
