# How to Make:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Boil salted water and cook pasta until just al dente, approximately 2 minutes less than package instructions. Drain thoroughly and pat dry with a clean towel.
03 - Toss pasta with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
04 - Arrange pasta in a single layer on the lined baking sheet. Bake for 18 to 22 minutes, flipping halfway through, until golden and crisp. Let cool for 5 minutes.
05 - In a small bowl, combine sour cream, mayonnaise, lime juice, chili powder, salt, and pepper. Mix until smooth and set aside.
06 - On an oven-safe platter or skillet, spread half of the baked pasta chips and sprinkle with half of the shredded cheeses. Top with remaining chips and cheese.
07 - Return the layered chips to the oven for 3 to 5 minutes until cheese has melted and is bubbly.
08 - Garnish with diced tomato, chopped red onion, sliced jalapeño, cilantro, and diced avocado. Drizzle with the prepared zesty sauce and serve immediately.

# Expert Advice:

01 -
  • It's crispy and creamy at the same time, with that addictive texture that makes you reach for just one more.
  • The zesty sauce ties everything together in a way that feels fancy but takes barely any effort.
  • You can have it ready in under an hour, and it impresses people way more than how simple it actually is.
02 -
  • Don't skip the drying step after draining the pasta—moisture is the enemy of crispiness, and a clean towel makes all the difference.
  • The pasta needs to go back in the oven for those final few minutes of cheese melting, which is what transforms it from good to actually special.
  • Add your fresh toppings right before serving; if they sit too long, they'll get warm and release their water into the dish.
03 -
  • The sour cream and mayo combination sounds heavy, but the lime juice cuts through it and keeps it from feeling cloying.
  • Flipping the pasta halfway through baking is the non-negotiable step that keeps things from burning on one side while staying pale on the other.
