01 - 4 cups seedless watermelon, cubed
02 - 2 cups English cucumber, thinly sliced
03 - 1/4 cup red onion, thinly sliced (optional)
04 - 1/4 cup fresh cilantro, chopped
→ Dressing & Seasoning
05 - 2 tablespoons fresh lime juice (about 1 lime)
06 - Zest of 1 lime
07 - 1 to 2 teaspoons Tajin seasoning, to taste
08 - Pinch of sea salt
09 - Freshly ground black pepper, to taste
→ Optional Garnishes
10 - 1/4 cup feta cheese, crumbled (optional)
11 - Extra lime wedges (optional)
# How to Make:
01 - Place the cubed watermelon, sliced cucumber, sliced red onion (if using) and chopped cilantro in a large mixing bowl.
02 - Pour the fresh lime juice over the assembled produce, sprinkle the lime zest, Tajin, sea salt and a grind of black pepper, then gently toss with tongs or a large spoon to coat evenly.
03 - Sample and adjust seasoning, adding more Tajin for heat or additional lime juice for brightness as needed.
04 - For enhanced refreshment, refrigerate the salad for about 10 minutes before serving; otherwise serve immediately.
05 - Transfer to a serving bowl or platter, garnish with crumbled feta and lime wedges if desired, and present chilled or at cool room temperature.
